It’s finally December – which as far as I am concerned is Christmas Time! This year I’m just so incredibly chipper and excited for Christmas! Maybe it’s because of all the exciting things going on, or maybe it’s because all my Christmas shopping is done, but for whatever reason I find myself diggin’ the season and jammin’ out to Christmas Music!
As a vegan who also works on creating healthy recipes – the holidays can be tough because there are so many sweet treats lying around! I have been dying for some vegan Christmas cookies – cause I like to treat myself – but I don’t want to overindulge this early in December! I like to save a few cookies for the very end of the year haha!
After some reflection, I decided I needed something gingerbread, so I created gingerbread dough overnight oats!
A long time ago I stumbled upon an overnight oats recipe that called for blending the oats the next morning, and it created this amazing doughy texture that I LOVED! I realized that I could combine this really simple and delicious idea with gingerbread ingredients – and I would have a tasty, guilt-free breakfast treat.
A side note – traditional gingerbread cookies get their distinct flavor from ginger, brown sugar and molasses! So However I prefer maple syrup and coconut sugar because I have them on hand at all times! This doesn’t taste EXACTLY like gingerbread, but it’s pretty close! If you want it to get an even closer taste and don’t mind the extras, replace the coconut sugar with brown sugar and the maple syrup with molasses!
With all that being said – this little oatmeal dish tastes great regardless and it’s packed with tons of awesome stuff, protein, omegas, and more! So whip up a batch tonight and have a delicious treat for breakfast tomorrow!
- 1¼ Cup Rolled Oats
- 1 Cup Almond Milk
- 1 Large Banana, Chopped into Small Pieces
- 2 Tbsp Chia Seeds
- 1 Tbsp Maple Syrup (or Molasses)
- 1 Tbsp Coconut Sugar (or Brown Sugar)
- 1 tsp Cinnamon
- ½ tsp Ginger
- ½ tsp Nutmeg
- Mix all the ingredients in a small container and let it sit in the fridge overnight.
- Place the overnight oats into a blender, and blend until smooth and doughy.
- Pour into a bowl and sprinkle with chia seeds and cinnamon.
Feel free to add more ginger and nutmeg if you want a stronger flavor punch.
